Yes, of course, there are Many makes and models of airplane.
The big players in the commercial airliner models are now Boeing and Airbus. Boeing makes 727, 737, 747, 767, 787 models. Airbus makes a319, a350, a380, and 380 models.
Prior to 1997 there was also McDonnell-Douglas, which made DC-9, DC-10, MD-11, MD-80, MD-90, MD-95. McDonnell-Douglas merged with Boeing in 1997.
In Private aircraft there are also MANY makes and models; (Piper and Cessna are probably best known brand names, each makes several models) and in Military aircraft there are MANY makes and models (in USA Lockheed-Martin and Northrup-Grummon are currently the major manufacturers, each makes many models of aircraft)..Are there different makes and models of airplane? Yes. Different manufacturers. And Different models and different variations. Some of the big boys are Boeing, Airbus, Embraer, Bombardie.
General Aircraft makers include Piper, Cessna, Tecnam, Beech, Mooney and a zilion other companys.
Now for the models and Variations.
Boeing has 707 up to 787.
That is the model. Now models have diffrent variations.( Some are a bit longer, some shorter, some a little faster.)
For the 757 example there is the 200. It's the longer range varient.

no two aircraft are the same ,by that I mean all A/C production companies have three shifts that provide 24 hour coverage , the model may be the same ,like a Falcon 2000 or a Hawker 800 or a Gulfstream G-5, but all aircraft are hand built- custom made and their blueprints have tolerances , which a mechanic can tell , they always have custom avionics which can lead to different letters on the model or every 5 to 10 years they will upgrade a current model
